Also known as frisée or Très Fine Maraîchère, Benefine forms a full, ruffled head with a heart that can be blanched to produce creamy, sweet inner leaves. It is more tipburn tolerant and slower to bolt than many other chicories of this type, making it suitable for warmer-season production.
