Also known as Spinach Mustard, Spoon Mustard, or Rosette Bok Choy, Tatsoi is one of the easiest and most rewarding Asian greens to grow. It forms a stunning, low-growing rosette of glossy, spoon-shaped dark green leaves with crisp, pale stems. In cooler conditions, it stays compact and flat, while warmer weather encourages a more upright growth habit.
