    Also known as Spinach Mustard, Spoon Mustard, or Rosette Bok Choy, Tatsoi is one of the easiest and most rewarding Asian greens to grow. It forms a stunning, low-growing rosette of glossy, spoon-shaped dark green leaves with crisp, pale stems. In cooler conditions, it stays compact and flat, while warmer weather encourages a more upright growth habit.

    Tatsoi is incredibly versatile in the kitchen. Enjoy the tender leaves fresh in salads, use them like spinach, or lightly cook them for a quick and nutritious side. It’s especially delicious when sautéed or stir-fried with a touch of oil. The flavor is mild with a subtle mustard kick that adds just the right amount of depth.
